I shop all too often considering I despise mail from Mastercard. I sip from fine china that is far older than the Queen. I daydream of a closet filled with Chanel. AND... If that all wasn't enough for the mind, I am a brand new mother of a baby girl, who at 4 months preferred gazing at my Wedding Ring than her plush toys.

Oatmeal on the go...go...go!


Breakfast can sometimes be a rush, not just as a mother but as a living human being. Mornings always seem to be the part of the day that we are pushing to get somewhere or do something in perfect time. Some run out the door without a meal in their tummy and this my friends is bad bad news. Such a bad thing to do to yourself, one should always start their day with a healthy, filling, and tummy pleasing meal. These little muffins will do just that. If your tummy could smile, it would!



INGREDIENTS
2 eggs
1 tsp vanilla extract
2 cups Applesauce | unsweetened
1 Banana | mashed
1/2 cup Honey
5 cups Old Fashioned Rolled Oats
1/4 cup Flaxseed Meal
1 tbsp Cinnamon
3 tsp Baking Powder
1 tsp Salt
1 1/2 cups Milk
Optional toppings: Raisins, Chocolate Chips, PeanutButter Chips, Coconut

METHOD
Preheat oven to 350 degrees.
Mix Eggs, Vanilla, Applesauce, Banana and Honey in a bowl.
Add in Oats, Flaxseed, Cinnamon, Baking Powder, Salt and mix well with wet ingredients.
Finally pour in Milk and combine.
Spray cupcake liners with a wee bit of cooking spray.
Pour mixture evenly into 18 muffin tin cups.
If using toppings add them onto the tops of muffins now.
Bake 30 minutes.
